Beef should be more than food; it should be an experience. Our identity is rooted in South Dakota, where cattle thrive on virgin prairie grasses and endure winters that shape naturally hardy, healthy herds.
Heritage & Roots
Our lineage runs deep in South Dakota ranching and agriculture, families who worked the land for generations, with roots tracing back to Austria and Germany. We grew up on some of the most productive beef land in the world.
Vision & Founding
In 2012, we set out to help ranchers push back against big packers. Nearly 40% of multigenerational farms have gone bankrupt since the 1980s. In 2022, after studying global supply shifts, we launched 90 W. Beef, a path for premium beef to reach families directly.
Philosophy & Position
We compete on quality, not commodity volume. We sell direct-to-consumer so people can access luxury beef at fair prices, independent of big food supply chains.
Product & Quality
- Breed: Japanese Red Cow (Akaushi) genetics.
- Place: Virgin prairie grasses; winters down to -30°F produce resilient cattle with thick coats, no hormones or antibiotics.
- Process: Carcasses hung on the rail and dry-aged 30 days; we sacrifice ~20% yield for flavor and tenderness.
- Freshness: Flash-frozen at peak quality; stores up to five years.
Raising Process
- Calves backgrounded on grass about five months.
- Finished on a heavy non-GMO corn ration for higher marbling and grading.
- Average harvest weight around 1,800 lbs (vs. industry 1,350–1,500).
- Animals are ultrasounded; only super-prime animals are selected.
Why We Exist
Since the 1980s, family ranchers have been squeezed out by corporate packers. Our goal is to restore the ability of ranchers to earn a living wage while giving families beef that tastes the way it should.
Brand & Impact
Childhood 90-hour ranch weeks taught us what hard work means. We believe ranching is difficult but worthwhile work, and it must be sustainable. Since 2022, we’ve sold over 130 head, gaining traction in Atlanta, Kansas City, and South Florida.
